DuoKwik Mielie Beer Bread Recipe

Ingredients:
500g self-raising flour
1 x 400g can of sweetcorn in water, drained
1 tsp salt
1 x 375ml bottle of beer

Instructions:
(charcoal or briquettes can be used for the fuel)
In a mixing bowl, combine all the ingredients, adding the beer at the end, to form a smooth batter.
Set aside in a warm place for 20 minutes, or until doubled in size.
Transfer the mixture to a greased cast-iron bread pot and place on top of 4-5 hot coals in the DuoKwik bowl. Then place another 4-5 hot coals on the lid.
Bake for about 1 hour, or until the crust is golden. Depending on ambient conditions and the type & quality of the fuel, you may need to add to, or remove from, the number of coals described above.
Once the bread is golden, tip the bread out of the pot and serve warm.
