Flame-Grilled Steak Recipe

Marinade Ingredients (per 600g steak):
2 Tbsp olive oil
1 tsp salt
1 tsp freshly ground black pepper
Equipment:
Charcoal
Gas Cylinder
DuoKwik
Bowl or tin foil for resting

Instructions:
Prepare the Steak:
Allow the steak to come to room temperature. Ensure the steak is reasonably thick
(2-3 cm is best).
Make the Marinade (for a 600-800g steak):
In a bowl, add 2 Tbsp olive oil, 1 tsp salt, and 1 tsp freshly ground black pepper and
mix thoroughly.
Marinate the Steak:
- Coat all sides and edges of the steak with the marinade mixture.
- Let the steak marinate for at least 15 minutes.
Prepare the Charcoal:
- Add enough charcoal to cover the base of the bowl with a decent layer.
- Light the gas and open it fully. Allow the DuoKwik to burn until the charcoal starts to
turn grey (approximately 10-15 minutes).
Flame-Grill the Steak:
- If flame-grilling immediately, leave the gas on once the coals are ready, to keep the
flames alive. If flame-grilling later, fan the hot coals to produce a small flame and
then immediately turn the gas on and it will ignite. Open the gas fully to produce the
biggest flame.
- Place the marinated steak onto the grilling grid in the flames. The flames will ignite
the oil and begin to seal the steak.
- Turn the steak after about 30 seconds and continue to turn regularly to prevent
burning.
Finish Cooking:
- Once the steak is nicely seared on both sides, turn off the gas and the steak should
be rare to medium-rare and full of great smoky, flame-grilled flavour.
- Continue to cook the steak on the coals until your preferred doneness is achieved
(medium-rare, medium, well-done, etc.).
Rest the Steak:
- Remove the steak and let it rest in a covered bowl or wrapped in tin foil for about 5
minutes.
- For best results, stand the steak on its edge in the covered bowl to allow the juices
to drain away from the meat.
