Ingridients:

For the mielies

  • 4 fresh mielies, husks and silk removed

  • Olive oil, for drizzling

  • Salt and black pepper, to taste

  • Tin foil

For the spicy butter

  • 100g butter, softened

  • 2 tbsp fresh coriander, finely chopped

  • ½–1 tsp chilli flakes, depending on how much heat you like

  • Zest of 1 lime

  • A pinch of salt

Instructions:

1. Make the Spicy Butter

In a small bowl, mix the softened butter with the chopped coriander, chilli flakes, lime zest and a pinch of salt until well combined. Set aside until you're ready to serve.

2. Prepare the mielies

Drizzle each mielie with olive oil and season lightly with salt and black pepper. Wrap each one securely in tin foil.

3. Fire up the DuoKwik

Light the charcoal using the gas ignition on your DuoKwik braai. Once the coals are ready, place the foil-wrapped mielies on the grid over medium-hot heat.

4. Braai until tender

Cook for approximately 20 minutes, turning the mielies regularly so they cook evenly. Cooking time may vary depending on the heat of your coals.

5. Get that final char

Carefully remove the mielies from the foil using tongs. Place them directly on the grid for a few minutes, turning as needed, until lightly charred in spots.

6. Butter them up

While the mielies are still hot, spread a generous amount of spicy butter over each one. Let it melt into the sweet corn, then serve immediately with extra lime wedges if you like.

DuoWild Braai Tip

Make the spicy butter ahead of time and keep it in the fridge until you're ready to braai. You can even roll it into a log using baking paper and slice off rounds as needed. Add extra chilli flakes if you like a proper kick!

Bon Appetit!
